Date Fruit Brownies

Ingredients

140g unsalted butter

140g pitted dates, finely chopped

60g good quality cocoa powder

90g plain flour

2 tsp baking powder

90g brown sugar

3 medium eggs

1 tsp vanilla extract

2 mashed up medjool dates

Method Preheat the oven to 160-C. Lightly grease a baking pan and line it with baking paper. Set aside. Melt butter in a heavy bottomed saucepan over low heat. Remove from heat, add date fruit and set aside. In a large bowl sift flour, cocoa powder and baking powder. Add the eggs, extract and sugar. Whisk with a hand blender till smooth. Add the butter and date fruit. Whisk for another minute. Pour into the prepared pan and bake for 15-30 minutes depending on your elevation. Allow to cool in the pan before slicing. Serve warm with ice cream or whipped cream.
